Lunch With @TinasTastyEats

[vc_row][vc_column][vc_column_text]Food-blogger and natural hair blogger, @TinasTastyEats, became a personal favourite a few weeks ago when I stumbled on her home-food Instagram page.

Being particularly health-conscious, I’m more of a “bring-your-lunch-into-work” type of person and would rather monitor my nutrition by preparing my own meals for the most part of the week. On @TinasTastyEats, Tina captures her meals with insight into how she prepares simple and tasty treats, with lunch to pack up and keep you going through the rest of the day.

The secret to meal-prepping is being creative with what you enjoy eating; preparing all the hearty ingredients ahead; and keeping it tasty even with mixing-&-matching the simplest of ingredients.

In this feature, Tina experiments with chicken, beef and sweet potatoes. Cooking these main ingredients earlier in the week cuts down the bulk of meal-prepping – then she freely incorporates tomatoes, carrots, kale and other easy (healthy) add-ons as the days go by.

So, as the new week begins, here’s a Monday – Friday meal plan I’ve collaborated for healthy non-compromisingly tasty lunches by @TinasTastyEats.

Now if you’re like me and you’re not into wearing dresses when an occasion doesn’t demand it, you’re probably going to write this one off completely. Please don’t! I’ve seen dresses done right in practically every season and my conclusion is this: dresses are not the problem, we are.

Ditch the idea that all dresses are “girly” and impractical.
Day dresses are often a more calm and simple version of occasional dresses. And while they still offer variety in styles from fit-and-flare to body-con; from A-line to straight, the idea is you can literally mix and match it with the rest of your wardrobe. Day dresses are like easy skirts: for one, you don’t have to find a matching top; and two, you can actually style it as if you were styling a skirt.

Peanut Butter Cup Pancakes

Fluffy buttermilk pancakes with peanut butter cups mixed in, topped with a peanut butter whipped cream and drizzled with homemade chocolate sauce… (Serves 3)
Ingredients:

  • 1½ cups all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • 1 large egg, beaten
  • 1⅓ cups buttermilk
  • ¼ cup butter, melted
  • 2 tablespoons creamy peanut butter
  • ½ cup mini Reese’s, each one cut in half, plus extra for garnish

Butter for cooking pancakes

  • Peanut Butter Whipped Cream
  • ½ cup heavy cream
  • 2 tablespoons confectioners’ sugar

Apple Gingerbread Pancakes with Apple Cider-Maple Syrup

A double dose of apple; shredded apples in the pancakes, and apple cider in the syrup (Serves 10)
Ingredients:

  • 2 apples, peeled and cored (I used honey crisp, granny smith good too)
  • 2 1/4 cups all-purpose flour or white whole wheat (which is what I used)
  • 1/4 cup firmly packed brown sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1/2 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 2 1/2 cups buttermilk or whole milk
  • 1 tablespoon molasses
  • 2 large eggs
  • 4 tablespoons unsalted butter melted, plus additional for cooking

Syrup

  • 1 cup apple cider or apple juice

Hello Twenty Three.
– Slacking because I haven’t birthday-blogged in two years –

I love ageing.
It’s an odd but exciting process; you know, the idea that time ticks, days go by and all of a sudden you’re another year older. The idea that you’re first a “child” and then you become an “adult” – without much effort on your part but to continue breathing and lapping up all the labels life has to offer.

And yet, the only thing automatic about age is the added number.
Yesterday I was 22, today I am 23.

It seems everything else about growing up takes a conscious effort of mental development and a handful of well-analysed life experiences.
